One that comes to mind is Anthony Gormly's ephemeral Quantum Cloud sculptures. Walking round them slowly the hint of a form can be made out within. Beautiful.

The big sun at the tate modern
It was brilliant that people just went and spent the afternoon there, in the same way people might spent time in a park
As well as the sun itself, I loved the way the mirrored ceiling made everything look enormously far away!
